Our flagship white wine is a classic Bordeaux blend of Sauvignon Blanc and Semillon. It is a wine of grace, elegance and age-worthy structure.
Light golden in the glass.
The wine shows aromas of lemon curd, grapefruit, and subtle wisps of smoke.
The palate shows flavours of ripe grapefruit, lime zest, as well as more tropical flavours of passionfruit, quince, and pineapple. There is a lively sense of saline minerality stringing these flavours together into a unified whole, through to the long finish. There is only the most subtle sense of oak but more telling is the sense of volume and richness coming from the sur-lie barrel aging.
- Winemaking Notes
Each vineyard block was separately harvested by hand at peak maturity. The grapes were then destemmed, crushed, and cold soaked for 2 hours prior to gentle pressing which extracted only the finest juice. The juice was fermented entirely in barrel (55% French oak puncheons, 45% stainless steel barrels) with 50% undergoing only wild fermentation. One quarter of the barrels were also allowed to proceed through a wild malolactic fermentation. All lots were barrel aged 9 months on the lees with lees stirring. The wine was carefully crafted by blending the individual lots to become the final blend. It is a wine of true complexity and elegance.
- Food Pairing
Complex and engaging, this is a seafood wine par-excellence: sea-bass, tuna, crab, or oysters would be a knock-out. Roast chicken or herb-crusted pork would be excellent too. Enjoyable now, this is a wine which will develop an added sense of richness with age.
